TRACKS Raw Bar & Grill sits right off the concourse in one of the busiest transit hubs in the country. Penult delivered a full restaurant and raw-bar build-out — an illuminated storefront and marquee, an extended feature bar with warm wood tops, backlit millwork and display refrigeration, stone and tile finishes, and the kitchen and food-service infrastructure behind it — all built and sequenced around live commuter traffic and Penn Station's operating rules.
